Nigella Moist Apple Cake is a classic apple-based sponge cake made with fresh apples folded directly into the batter. As the cake bakes, the apples soften and melt into the crumb, creating a naturally moist texture. Lightly spiced and gently sweet, it’s a simple British-style cake that focuses on comfort, ease, and everyday ingredients rather than decoration.

  • 3 medium apples, peeled and chopped

  • 200g plain flour

  • 1½ tsp baking powder

  • ½ tsp cinnamon or mixed spice

  • 175g caster sugar

  • 150ml vegetable oil or melted butter

  • 2 large eggs

  • 1 tsp vanilla extract

  • Pinch of salt

  • Icing sugar or apple glaze (optional topping)

Instructions

  • Prepare the apples – Peel, core, and chop the apples into small, even pieces.

  • Mix dry ingredients – Combine flour, baking powder, spice, and salt in a bowl.

  • Whisk wet ingredients – Beat eggs, sugar, oil or butter, and vanilla until smooth.

  • Combine gently – Fold the dry ingredients into the wet mixture without overmixing.

  • Add the apples – Stir in the chopped apples until evenly distributed.

  • Transfer to tin – Pour the batter into a lined cake tin and smooth the top.

  • Bake until set – Bake at 170°C (340°F) for 45–50 minutes until golden and firm.

  • Cool before slicing – Let the cake cool to allow the crumb to settle properly.
